This is a recipe from one of our own, so you know it’s tried and tested. One of our Senior Personal Trainers, Matthew James Connolly, makes a a mean Sugar-Free Banana Bread perfect for when that carb craving hits!

Ingredients:

2 bananas, mashed

2 1/2 cups of almond meal

1 tsp nutmeg

1 tsp cinnamon

1 tsp baking powder

4 eggs

1/4 cup coconut oil

1/4 cup rice malt syrup

1 tsp vanilla extract

Method:

  1. Preheat oven to 180 degrees
  2. Mix all wet ingredients together
  3. In a separate bowl, mix all dry ingredients together
  4. Combine both mixtures other and stir well
  5. Place into a baking tin and bake for 30-40 minutes
